There's been a growing trend in Portland over the past several years of food carts and food trucks becoming brick-and-mortar restaurants as their business takes off. There's likely to be another success story when it comes to Eaux, the New Orleans-inspired food cart that will take over the space left behind by Crooners and Cocktails at 90 Exchange Street in Portland.

According to Portland Food Map, Eaux is planning a scaled-up version of their popular food cart that serves everything from a roast beef po'boy to jambalaya. The cuisine will continue to be New Orleans and southern-inspired. The restaurant will also maintain the name Eaux, the same name as the food cart.

Renovations are taking place with an expected opening date for Eaux in late-May.
