A small restaurant named Bird & Co has made waves for serving up some dynamite variations on tacos, as well as some delicious margaritas made in-house. Bird & Co is typically packed for lunch and dinner, especially during warm summer nights. But their understated brunch menu is also a big winner, taking some well-known classics and putting a twist on them.

Bird & Co's version of Eggs Benedict features their house-made carnitas as the protein, topped with some spicy peppers for a little extra flare. It's served with their signature hash, a flavor bomb of sweet potatoes, onions, and peppers that melt in your mouth.

There's also Bird & Co's Churro French Toast. The bread is made by their neighbor, Big Sky Bread Company, and is perfectly seared with cinnamon and nutmeg. Fresh whipped cream along with blueberries and raspberries make each bite absolutely delectable.

And what would a taco place be without a breakfast taco? Bird & Co has one, and it's filled with everything you'd expect, plus a little surprise, too. Crispy home fries add the perfect touch to a taco that is already delicious.
