Over the last decade plus, there's been an incredible rise in the popularity of food trucks throughout Maine. The fervor has gotten so intense, there's a seasonal food truck park in Wells that is cranking almost every single summer night.

But before there were specialized food trucks for every flavor, there was a pathfinder that Westbrook, Maine, residents know very well. That would be Don's Lunch, the iconic yellow truck that has been slinging food from its window since 1976.

Over the years, things have changed for Don's Lunch, from different owners to different rules as to when and how it could operate. Don's Lunch went from being one of the easiest places mill workers could grab a bite to eat for lunch to a hotspot for bar flies needing a late-night snack.

Several years ago, the current owner for Don's Lunch, Craig Bernier, battled some health issues that forced him to take the truck off the road. In addition to that, new rules were put into place about when and where food trucks could park in Westbrook. For many, it seemed like the historic run of Don's Lunch may be over.

However, sometimes you just can't keep a good thing down. Shared on Facebook by Don's Lunch Van, the iconic food truck is about to have a revival, but in a different form. Don's Lunch will be taking over the vacated space left behind by the River's Edge Deli on Main Street in Westbrook.

Don's Lunch plans to return to its roots, offering its classic burgers, fries, onion rings, and other favorites. They also plan on offering a breakfast menu as well. There will be a takeout window as an homage to the longtime food truck as well as some indoor seating for those that want a lunch not on-the-go.

Don's Lunch promises to announce a grand opening date for their new location soon.
